When I was a little kid, my favorite meal my mom ever made was Vegetable Beef Soup. I remember when it was super cold out and coming home to that, it would just make my day. Over the years I have had others but nothing compares to my moms recipe. Every time I have it, I remember my child hood and all of the good memories that go with it.
For me a good recipe always has good memories. I like to associate them with things and for some reason, this one of the of things in my child hood that just stood out. It is nothing special. It is memories of me and my 2 sisters sitting around the table, getting along, eating soup and having fun. It is coming in after playing in the snow and getting a bowl of hot soup. Nothing compares to it.
I wanted to share this again with my blog readers because it is by far one of the easiest recipes to make and one of the yummiest. I love making it. I have tweaked mine over the years and it taste so much like my moms!
1 lb beef stew meat
2 potatoes (peeled)
1 bag of mixed vegetables (16 oz)
2 (14 ounce) cans diced tomatoes (if you want this in there)
3 1/2 cups beef broth (or 2 14-oz cans)
2 small bay leaves
2 teaspoons garlic powder
3 cups vegetable juice (I use tomato juice)
1/8 teaspoon black pepper
I liked to add noodles to my soup, so I add about half a box of whatever noodles I have laying around!
1. In your large pot or dutch oven, brown your stew meat in Olive Oil on medium-high. Make sure all sides are brown.
2. Add in the rest of your ingredients!
3. Bring to a boil.
4. Reduce heat and simmer uncovered until beef is almost tender, for about a hour.
5. Cover and let simmer for about 30 minutes longer, or until your beef is tinder and your potatoes are done.
s, potatoes, corn, bay leaves and garlic.
Serve and season with freshly ground black pepper, hot sauce, or crumbled saltines, if desired.
If you want to add pasta into it, cook them while everything is simmering and add them at the very end. It makes more of a stew but I love it. Also, make some cornbread to go with it. Super easy and super yummy!

If you have watched the news at all lately, the East coast got slammed with snow. Winter in Virginia is very odd. It is either all or nothing. We had over 2 feet of snow at our house. It snows from Friday morning until Saturday evening. After this weekend, if it would never snow again, I would be fine with it. I shoveled so much snow that my back is hurting today and so if my right heel. I know I got a good workout but dang it, I hate shoveling snow.
The dogs loved the snow we got at first. The played in it a bunch on Friday. This was the calm before the storm. After Friday, they were done. They refused to go off the porch and preferred to pee on the deck in the snow instead of the 2 feet of snow on the ground. I can't say i blame them, if snow covered my head I wouldn't want to go out in it either!
I definitely did not eat the best while being snowed in and I did not workout like I should have. I did shovel a shit ton of snow and I feel like that makes up for it. I did finally do some Zumba last night and taking a few days off was bad for me. I need to stay with it.
After shoveling all of the snow, a Lush bath was in order. I am addicted to Lush products and having a bath bomb when you are achy from the snow, is magical. I spent a good 45 minutes just laying in the tub and reading a book. It was so quiet and peaceful and I really needed it to help me relax.
Right now, I do not want any more snow this year. We got way to much than what we needed. Luckily it will be warm this week and it should melt quickly. It could of been worse. My friends in WV got around 3 feet of snow. We are lucky, we have a tractor and are able to plow our own driveway. We did not lose power nor did we go crazy!

I had an amazing long 3 day weekend. It went by way way to fast.I wish it would come back and stay a little bit longer. I hate how fast the weekend goes but the work week wants to drag its sweet happy ass.
Friday after work I went to a retirement party for a colleague. It was a good time. I had to be on my best behavior but I still maintained my naturally goofy self. I got to try some beer I had never had. I was shocked I actually liked it. Normally I only drink Bud Light.
I also had a fabulous hair day on Saturday. When you have a good hair day, you have to document it. My hair doesn't always do what I want and trying to get my husband to take a picture of my hair is to much of a chore. It is just easier to take the picture myself. I plan on doing a hair tutorial very soon on the blog!
I finally got to see the new Hunger Games Part 2. It was just as amazing as I thought it would be. A few things were different from the books but it was still really good. I have to say I am very happy with how they took it from pen and paper and put it on the big screen. I was so excited for the ending of the movie as it was one of my favorite parts in the book series. I also decided to get some Duck Donuts afterwards. I only ate one part of one donuts and my husband ate the rest. I am being strong.
My replacement jawbone came in. My Up Jawbone broke about 2 weeks ago. The company was amazing and replaced my old one for free with the new Up Move. I love this one much more. It does not vibrate in my sleep like my old does and I think it looks nicer. I now wear a Jawbone and a Fitbit. I know..it is a bit excessive.
And lastly, I took this picture last night after I had already taken out my contacts. I was feeling pretty cute and my face does look smaller. I spent Monday morning with my family. My grandfather was in the hospital and after that I spent some much needed time with my parents. I had a long and busy day and at the end of it, I still felt pretty.This is by far one of my favorite pictures I have ever taken. There is nothing special about it. I am wearing glasses and winding down for the night but I love this picture.

As you know, I love me a good fun run. I typically run 10-15 races a year. I am planning on participating in the The Hard Cider Run this year. I ran the race last year in Virginia and to be honest, it whipped my butt. It was an amazing run and such a good workout. There is one hill that is TOUGH but it is worth every step to get through it. Plus, you get a free medal at the end for kicking its butt. This is a fun run and you get some yummy hard cider at the end of it.
Now this can be a family fun event as well. The entire family is allowed to run. They have youth sized shirts and they get non-alcoholic apple cider at the end. I find that running this race is fun as a team. I like having my friends help push me along and I am able to help encourage them as we go. Plus, you get a $5.00 discount for registering as a team of 4+.
Now they have a new medal this year, it is sort of an extra bonus at the end. It is an extra option and cost $10.00 to participate in this one. You eat 3 donuts along the way at each mile marker and you will receive a second, exclusive The Hungry Apple medal. To me, that sounds amazing!
