Memories + a recipe


When I was a little kid, my favorite meal my mom ever made was Vegetable Beef Soup. I remember when it was super cold out and coming home to that, it would just make my day. Over the years I have had others but nothing compares to my moms recipe. Every time I have it, I remember my child hood and all of the good memories that go with it. 


For me a good recipe always has good memories. I like to associate them with things and for some reason, this one of the of things in my child hood that just stood out. It is nothing special. It is memories of me and my 2 sisters sitting around the table, getting along, eating soup and having fun.  It is coming in after playing in the snow and getting a bowl of hot soup. Nothing compares to it.

I wanted to share this again with my blog readers because it is by far one of the easiest recipes to make and one of the yummiest. I love making it. I have tweaked mine over the years and it taste so much like my moms!

Ingredients:
1 lb beef stew meat
1 onion
2 potatoes (peeled)
1 bag of mixed vegetables (16 oz)
2 (14 ounce) cans diced tomatoes (if you want this in there) 
3 1/2 cups beef broth (or 2 14-oz cans)
2 small bay leaves
2 teaspoons garlic powder

3 cups vegetable juice (I use tomato juice)
1/8 teaspoon black pepper


I liked to add noodles to my soup, so I add about half a box of whatever noodles I have laying around!

1. In your large pot or dutch oven, brown your stew meat in Olive Oil on medium-high. Make sure all sides are brown. 
2. Add in the rest of your ingredients! 
3. Bring to a boil.

4. Reduce heat and simmer uncovered until beef is almost tender, for about a hour. 
5. Cover and let simmer for about 30 minutes longer, or until your beef is tinder and your potatoes are done.

Serve and season with freshly ground black pepper, hot sauce, or crumbled saltines, if desired.





If you want to add pasta into it, cook them while everything is simmering and add them at the very end. It makes more of a stew but I love it. Also, make some cornbread to go with it. Super easy and super yummy!
